Herbed Goat Cheese Spread

Bonus Recipe:  Herbed Goat Cheese Spread from the America's Test Kitchen Family Cookbook (pg. 22)

1 (11- or 12-ounce) log goat cheese
3 tablespoons milk
1 tablespoon minced fresh chives
1 tablespoon extra-virgin olive oil
2 teaspoons minced fresh thyme
Salt and pepper

Process all of the ingredients in a food processor until smooth, about 1 minute.  Season with salt and pepper to taste and transfer to a serving bowl.  Serve with crackers or a thinly sliced baguette.
